- Potato starch (Non-gebrokts)
- Matzo meal (Gebrokts)
- Coating Crumbs (have to check the ingredients to see if gebrokts or non-gebrokts)
- Finely ground nuts

BAKING POWDER 1 t
- 1/4 t baking soda plus 1/2 t cream of tartar
- Passover baking powder

CONFECTIONER’S SUGAR 1 C
- Mix 1 C granulated sugar less 1/2 T & process in a blender
- Then sift in 1 1/2 t potato starch
♦♦♦♦♦
CORN STARCH
Potato Starch (Non-gebrokts)

FLAVORING
- Passover brandy
- Passover Vanilla sugar
- Vanilla bean
- Passover flavorings

FLOUR 1 C all-purpose
- 5/8 C Potato starch (Non–Gebrokt)
- ½ C Matzo cake meal plus ¼ to ½ potato starch (Gebrokts)

FROSTING 1 C
1 C granulated sugar & ½ T Potato starch

HEAVY CREAM FOR CREAMY SOUPS 1 C
- 3/4 C milk plus 1/3 C melted butter OR margarine
- If making a vegetable soup like broccoli,
instead of using heavy cream
you can steam the broccoli, process it & put it in your soup stock to cook

GRAVY THICKENER 1 T of flour
Use potato starch OR 1 egg yolk

LIGHT CREAM FOR COOKING 1 C
7/8 C milk plus 2 t melted butter OR margarine

PIE SHELL BASE OR STREUSEL TOPPINGS
- Passover cookies
- Kichel
- Mandelbroit
- Cake crumbs
- Matzo meal with 1 t of sugar (gebrokts)

SOUR MILK FOR BAKING 1 C
1 T lemon juice plus enough milk to make 1 C & let stand for 5 minutes
