#1 - REUBEN LATKES
INGREDIENTS FOR LATKES
- 3 lbs Russet potatoes
- 1T Potato starch
- 3 Eggs
- 1 1/2 T Salt
- Vegetable oil (for frying)
DIRECTIONS FOR MAKING LATKAS
- 1. Grate the potatoes on the largest holes of a box grater & submerge in cold water
until ready to use to prevent oxidation. - 2. Squeeze potatoes extremely well until there is no water left on them & combine with
potato starch, eggs & salt - 3. Heat a frying pan & cover with about an 1/8th inch of vegetable oil.
- 4. Fry 1/8th C of batter at a time until golden on each side & drain on paper towels
until ready to serve.
INGREDIENTS ADDED TO MAKE REUBEN LATKES
- Cooking Spray (for frying)
- 12 oz Pastrami (Cut into 1/2 inch slices)
- 1 C Sauerkraut
- 1/4 C Mayonaise OR Vegenaise
- 2 T Ketchup
- 1/2 t White horseradish
DIRECTIONS FOR COMPLETING REUBEN LATKAS
- 1. In a frying pan sprayed with cooking spray, cook pastrami in batches until crispy.
- 2. Combine mayonnaise or vegenaise, ketchup & horseradish for Russian dressing.
- 3. Top each latke with a few pieces of pastrami & a pinch of sauerkraut & drizzle Russian
dressing over the top.
