Baked Bluberry FrenchToast
INGREDIENTS
- 1 lb Brioche ( loaf sliced)
- 2 C Blueberries (1 pint)
- 2½ C Almond Milk (Vanilla flavor)
- 10 Eggs
- ½ C Real Maple Syrup
- 1 t Cinnamon
- 2 T Butter (melted)
- 2 T Powdered Sugar
DIRECTIONS
- 1. Pre-heat oven to 375.
- 2. Spray a 9x13 pan with non-stick spray.
- 3. Cut the bread into small cubes.
- 4. Put half the bread in the pan.
- 5. Sprinkle with half of the blueberries, then top with the remaining bread & blueberries.
- 6. Crack eggs one at a time into a large glass measuring cup.
- 7. In a blender, add the almond milk, eggs, maple syrup & cinnamon & blend until
combined. - 8. Pour the mixture on top of the bread & blueberries.
- 9. Press down with your hands to ensure bread has soaked up the mixture.
- 10. Cover the pan with tin foil & bake for 40 minutes.
- 11. Take off the tin foil & return the pan to the oven & bake 15 more minutes.
- 12. Once baked, brush with melted butter & sprinkle with powdered sugar.
- 13. Serve with maple syrup.
