Cajun Pizza
INGREDIENTS
- 1 lb Pizza dough (purchased) (prepared)
- All purpose flour
- Cornmeal
- 1/2 C San Marzano Tomatoes (or another good quality)
- 3 Garlic (cloves) (minded)
- 1/2 - 1 t Cajun seasoning
- 1 C Gouda Cheese (shredded) (smoked)
- 1 C Mozzarella Cheese (shredded)
- 1/2 C Onion (red) (thinly sliced)
- 1/2 C Bell Pepper (green) (chopped)
- 1/2 C Sweet Corn (cut from the cob or frozen whole kernel corn thawed)
- 1/2 Jalapeno (fresh) (seeded & minced)
- Kosher Salt
DIRECTIONS
- 1. If available, place a pizza stone on the bottom rach in your oven & pre-heat to 500
degrees. - 2. Meanwhile, let the dough stand at room temperature for 30 minutes.
- 3. On a lightly floured surface, roll dough to a 12 inch circle.
- 4. Dust a pizza peel or rimless baking sheet with cornmeal.
- 5. Transfer dough to the peel.
- 6. If not using a stone, transfer dough to a pizza pan that'sbeen lightly brushed with oil
& dusted with cornmeal. - 7. Thinly spread crushed tomatoes over dough.
- 8. Sprinkle with garlic & Cajun seasoning.
- 9. Top with cheeses, onions, bell peppers, corn & jalapeno.
- 10. Sprinkle with a bit of Kosher salt.
- 11. Use the peel to transfer pizza to the pizza stone OR place a pizza pan in the oven.
- 12. Bake until the cheeses & crust are nicely browned - about 10 minutes.
