CHEESE KREPLACH
INGREDIENTS
- 8 Egg yolks
- 1/4 lb. Butter (unwhipped)
- 1 C Water
- 4 C Flour
SWEET FILLING
- 1 1/2 lbs. Farmer cheese
- 3/4 C Confectioner's sugar
- 2 T Vanilla sugar
- 2 Egg yolks
- 2 T Farina
SALTY FILLING
- 1 1/2 lbs. Farmer cheese
- 4 Eggs
- 4 oz Butter (unwhipped)
- 1/2 t salt
- Pepper (a pinch)
- 1 1/2 t Cornstarch
DIRECTIONS
- 1. Combine ingredients for dough, knead until smooth & soft & divide into four parts.
- 2. Working with one part at a time, roll out to a quarter-inch thickness.
- 3. Cut into three-inch squares.
- 4. Combine ingredients for desired filling.
- 5. Place one tablespoonful onto center of each square.
- 6. Fold dough into triangles.
- 7. Seal edges with tines of fork.
- 8. Drop kreplech into boiling water.
- 9. Cook for 15–20 minutes.
- 10. Remove with slotted spoon, drain well.
- 11. Prior to serving, re-warm in melted butter or in toasted breadcrumbs.
