Salmon Fish Sticks
INGREDIENTS
- 1 Salmon fillet (large center-cut about 9x4 inches) skinned
- 1/2 C Flour (all-purpose)
- 1/2 t Sea Salt (fine)
- 1/4 t Black pepper (freshly ground)
- 1 C Parmesan (grated)
- 1 C Bread crumbs (seasoned)
- Cooking Spray
Dip - 1/3 C Mayonnaise (low fat)
- 1/3 C Yogurt (fat free) (plain)
- 1 T Mustard (Dijon)
- 1 T Parsley or Chives (chopped) (fresh)
DIRECTIONS
- 1. Pre-heat the oven to 450 degrees F.
- 2. Rinse the salmon fillet & pat dry with paper towels.
- 3. Cut the fillet in half & then slice into 1/2 inch pieces.
- 4. Place the flour in a medium bowl & season with the salt & pepper.
- 5. Place the egg whites in another bowl & beat until frothy, about 30 seconds.
- 6. Combine the Parmesan & bread crumbs in a third bowl.
- 7. Coat the salmon pieces in the seasoned flour & pat to remove any excess flour.
- 8. Dip the floured salmon in the egg whites & then into the Parmesan mixture, gently
pressing the mixture into the fish. - 9. Place the breaded salmon pieces on a liberally oiled baking sheet.
- 10. Drizzle lightly with the olive oil.
- 11. Bake for 15 to 20 minutes until golden brown.
- 12. For the sipping sauce mix the mayonnaise, yogurt, Dijon mustard & parsley in a
small dipping bowl.
