SAVORY HAMANTASCHEN

INGREDIENTS

  • Filling:
  •           Olive oil
  • 2 T     Garlic (chopped)
  • 1 C     Onions (sliced)
  • ½    Red bell peppers (medium) (diced)
  • ½ C    Bell peppers (your choice of color) (diced medium)
  • 2         Zucchini (smal) (diced) (medium)
  •            Salt & Pepper
  • ½ C    Olives (pitted)
  • C    Herbs (fresh)
  • 2         Eggs
  • ½ C   Cheese Pot
  • ½ C   Cheese (Farmer's)
  • ½ C   Cheese (Havarti ) (grated)

    Dough:
  • 2         Dry Yeast (packages)
  • ½ C    Water (warm)
  • 2 T      Honey, divided
  • 1½ Water (cool)
  • 2 t      Salt
  • 4 T      Olive oil
  • 6 C      Flour

    Optional Cookie Filling:
  • 2 oz.  Sugar (light brown)
  • ½ t    Sugar
  • 4 oz   Orange juice
  • 1 oz.  Bourbon
  • 1 oz.  Honey
  • 5 oz.  Dried Fruits (assorted) (small diced) (sun-dried cherries, sun-dried blueberries, raisins,           apples, apricots, etc.)

DIRECTIONS

  • 1. In a large sauté pan add the olive oil, garlic, onions & peppers & zucchini.
  • 2. Sauté until onions are translucent.
  • 3. Add salt, pepper, olives & fresh herbs.
  • 4. Stir well remove from the fire.
  • 5. Place in a large bowl & fold in the eggs & cheeses.
  • 6. Adjust seasonings & set aside to allow to cool.

    To make the Dough

  •   1. In a small bowl combine the yeast, warm water & 1 T of the honey.
  •   2. Set aside and allow to proof (approximately 3 to 4 minutes).
  •   3. In another small bowl mix the remaining honey with the cool water, salt & oil.
  •   4. In a food processor put in all the flour.
  •   5. While the machine is on add the cool water mix, then the warm water mix.
  •   6. Process until the dough pulls away from the sides of the bowl.
  •   7. Remove to a large, well-oiled bowl.
  •   8. Cover with plastic wrap or a damp towel.
  •   9. Let rise until doubled in volume in a warm area.
  • 10. Punch down dough.
  • 11. Roll out to approximately two 10” circles.
  • 12. Fill each with stuffing & pinch into triangles.
  • 13. Brush with olive oil. 14. Bake at 450°F on cookie sheets that have been sprinkled with       cornmeal to prevent sticking.

Cookie Filling

  • 1. In a small sauce pot combine all ingredients.
  • 2. Cook until dry fruit is softened & mixture is syrupy.
  • 3. Set aside to cool.
  • 4. When mixture has cooled, place in food processor & pulse to rough chop
  • 5. .Fill into small rounds of cookie dough
