TZIMMES
INGREDIENTS
- 9 Carrots (medium ) (about 1 lb) (peeled)
- 4 Sweet potatoes (about 2 lbs)
- 1 C Prunes (bite-size) (pitted ) (about 6 oz)
- 1 C Apricots (dried) (about 5 oz)
- 2 T Lemon Juice (fresh)
- 1/3 C Orange Juice (fresh )
- ¼ C Honey
- 1 t Cinnamon (ground)
- 2 1/2 t Orange zest (from one orange)
- 1/4 t Salt
DIRECTIONS
- 1. Heat oven to 350 degrees & cut carrots into 2-inch pieces.
- 2. Bring a large saucepan of water to a boil & lower heat to medium.
- 3. Add sweet potatoes in their skins & cook for 20 minutes, adding the carrots after 10
minutes. - 4. Drain in a colander & set aside until cool enough to handle.
- 5. Peel sweet potatoes & cut into 1-inch chunks.
- 6. Place in a large bowl along with carrots & remaining ingredients.
- 7. Mix well & transfer to a 2-quart baking dish.
- 8. Cover with foil & bake for 30 minutes, basting with pan juices after 15 minutes.
- 9. Remove from oven & serve immediately or after cooling the Tzimmes cover & place in
your refrigerator until you’re ready to rewarm it.
