2 EASY SALMON DISHES

ROASTED SALMON
WITH MAPLE SYRUP & MUSTARD
INGREDIENTS
- 2 T Dijon mustard
- 2 t Cilantro (fresh) (finely chopped)
- 1 T Mayonaise (light) (pure)
- 2 t Maple Syrup
- 4 Salmon Fillets (skinless) (center-cut salmon fillets)
- Kosher salt & freshly ground black pepper
DIRECTIONS
- 1. Pre-heat the oven to 400 degrees F.
- 2. Line a rimmed baking sheet with aluminum foil.
- 3. Mix together the mustard, 1 T of the cilantro, the mayonnaise & maple syrup in a bowl.
- 4. Put the salmon fillets on the baking sheet & sprinkle with 1/4 t each salt & pepper.
- 5. Spread some of the mustard mixture evenly over each fillet.
- 6. Bake until just cooked through, 10 - 12 minutes.
- 7. Sprinkle with the remaining 1 T cilantro & serve.

SALMON WITH HONEY
& SESAME SEEDS
INGREDIENTS FOR SALMON
- 2 lbs Salmon (side) (skin on)
- 2 Garlic (cubes) (frozen) OR (2 minced garlic cloves)
- 2 T Olive oil
- 2 T Honey (generous)
- 2 t Sesame seeds (toasted)
- 2 t Sesame seeds (black)
- Lemon (haves) (Seared for garnish)
INGREDIENTS FOR SAUCE
- 1/4 C Dijon OR yellow mustard
- 1/2 C Mayonnaise (regular or light)
- 1/4 C Honey
- 2 - 3 T Lemon juice (fresh)
- 3 T Dill (fresh) (chopped)
DIRECTIONS
- 1. Pre-heat oven to 350°F.
- 2. Line a baking sheet with baking paper.
- 3. Place salmon skin-side down on prepared pan.
- 4. In a small bowl, whisk together garlic, oi & honey.
- 5. Pour & brush glaze all over salmon.
- 6. Sprinkle with sesame seeds.
- 7. Bake at 350°F for 25 to 30 minutes or until cooked through.
- 8. To sear lemons cut lemons in half & sear cut-side down in a medium sauté pan over
high heat for 5 minutes or until nicely browned. - 9. In a small bowl whisk to prepare sauce together mustard, mayonnaise, honey, lemon
juice, & dill. - 10. Serve salmon warm or at room temperature with dipping sauce, and seared lemon
halves for garnish.
