SHAKSHUCA SPAGHETI DISH
INGREDIENTS
- 10 oz Spaghetti (dry)
- 1 Marinara sauce Jar (24oz)
- 1/3 C Extra virgin olive oil (like Colavita)
- 2 T Cumin (ground)
- 1 t Coriander (ground)
- 2 t Red pepper flakes (crushed)
- 1 C Feta cheese
- 6 Eggs (medium)
- Garnish: feta cheese, chopped cilantro or parsley
DIRECTIONS
- 1. Pre-heat oven to 350°F.
- 2. Line a spring form pan with parchment paper, allowing edges to hang outside the pan.
- 3. In a large pot, cook pasta in boiling water for 10 minutes.
- 4. While pasta is cooking, combine marinara sauce, extra virgin olive oil, cumin, coriander
& crushed red pepper flakes. - 5. Drain spaghetti & add the sauce mixture, tossing to coat pasta completely.
- 6. Gently mix in feta cheese chunks.
- 7. Pour mixture into prepared pan and using a spoon create small wells on top of pie.
- 8. Gently pour eggs into wells.
- 9. Bake for 30 minutes, until eggs are set to your liking.
- 10. Allow to cool a bit before removing from pan.
- 11. Serve warm & garnish with feta & chopped fresh herbs.
