DIFFERENT TYPES OF
REAL SUGAR
REFINED WHITE SUGAR
- Pure sucrose
- Can be produced from either sugar cane or sugar beets
- Sugar produced from cane & beets are chemically identical

MOLASSES
- It’s everything that gets taken out when you refine sugar cane into white sugar
- Think of it as a leftover from the sugar refining process

BROWN SUGAR
- Is refined white sugar with a bit of molasses added back into it
- If you ever run out of light brown sugar, you can make your own by
adding 1 T of molasses to 1 C of sugar - Add an additional 2 T if you want it to be dark brown sugar

EVAPORATED CANE JUICE
- Is made from sugar cane not sugar beets
- It’s slightly less refined & has more color & flavor
- The tan-colored crystals have a slight caramel or molasses smell
- If the crystals are large & coarse it's called Demerara sugar

RAW SUGAR
(Turbinado)
- Is made from dehydrated cane juice
- It retains a bit more of the natural impurities, so it’s even a little darker
- The molasses smell & flavor are a little stronger

ORGANIC CANE SUGAR
- The sugar cane was grown organically, without synthetic herbicides or pesticides
- It may be lightly refined or almost pure white

ALL SUGARS DEFINED ABOVE
- Are natural since they all come from plants
- All of these sugars are refined
- They’ve all been extracted from cane or beet & dried into a crystalline form
- The ones that we call “natural” are just a little bit less refined
- They are not 100% pure sucrose, like white sugar
- They might be only 99% pure sucrose
