HOW TO USE A CAST IRON SKILLET
Cast iron cleaning is something of tradition passed down to generations
along with the skillet itself
Some cooks who use cast iron skillets
don't let any water or any type of soap near them after they're seasoned
No matter how much rust you have,
there are options beyond discarding rusted cast iron
.
HOW TO SEASON
A CAST IRON SKILLET
When you bring your new skillet home, you'll need to season it using
- Dish soap
- Sponge or stiff brush
- Clean, dry cloth or paper towels
- Vegetable oil or shortening OR other oil of your choice
SEASONING INSTRUCTIONS
- Pre-heat oven to 325 F
- Wash the skillet with warm, soapy water & a sponge or stiff brush
- Cast iron should not normally be washed with soap, but it's fine here since the pan is
about to be seasoned - Rinse & thoroughly dry the skillet
- Using a cloth or paper towel, apply a thin coat of vegetable oil or melted shortening to the
inside & outside of the skillet - Place the skillet upside down on the oven's center rack
- Place a sheet of aluminum foil below the rack to catch any drips
- Bake for an hour
- Turn off heat & allow the skillet to cool completely before removing from oven
- A seasoned skillet is smooth, shiny & non-stick
- You'll know it's time to re-season if food sticks to it

For severe rust that covers most of the cookware surface
- Take the pan to a machine shop to have it sandblasted & restored to raw cast iron
- Season immediately starting with step # 4 above.
