VEGAN CHALLAH
- 2 Active dry yeast packages (Do not use Quick or Rapid Rise Yeast)
- 2 C Warm water (1 C boiling water to 1 C cold water)
- 1/2 C Sugar (divided)
- 3 T Flaxseed
- 3/4 C Water
- 6-9 C Whole Wheat flour
- 2 T Honey
- 2 t Salt
- 3 oz Vegetable oil
- ½ t Turmeric
Optional Toppings
- Sesame Seeds
- Poppy Seeds
Optional Ingredient for Rosh Hashana
- 1 C Raisins
INSTRUCTIONS
- In a small bowl, dissolve yeast in water
- Add 1/4 cup sugar & allow the yeast to work for about 10 minutes while you prepare
the dry ingredients - Place flaxseed & water in a processor & blend for about 2 minutes or until the mixture
is the consistency of unbeaten egg white - Place 6 cups of flour, salt, remaining sugar & raisins (if using them) in a large bowl
- Add flaxseed mixture, oil, honey & yeast
- Mix until dough forms, adding more flour if needed
- Turn the dough out onto a floured surface, flour your hands & knead the dough for about 10 minutes
- Add flour as necessary until the dough no longer sticks to the board or your hands
- Oil a deep bowl Put the dough in it, turning to grease it on all sides
- Cover the bowl with a damp cloth or with plastic wrap
- Allow it to rest in a warmer or an oven at 150 degrees Farenheit for about 1-1/2 hours
or until doubled in bulk - Punch down & allow to rise a second time
- Punch down again & knead briefly
- Preheat oven to 350°F
- Use a heavy sharp knife to cut dough in half
- Cover one half while you shape the first one

- For a crisp crust, brush loaves with cold water or olive oil before placing in oven
- Sprinkle some sesame seeds or poppy seeds over the challah
- Place it in a preheated 375-degree oven and bake for 30 minutes
- Cool on racks for at least 2 hours
- The usual criterion for doneness is that the loaf sounds hollow
when rapped on the bottom with your knuckles - Another method is to insert a thermometer in the crease on the bottom of the bread & if it registers 200°F it is done
- Cool loaves on a cooling rack
