American Baked Schnitzel
INGREDIENT
- 1 T Olive oil (or more if desired)
- 6 Chicken breasts (cut in half lengthwise) (butterflied)
- Salt & ground black pepper to taste
- 3/4 C Flour (all-purpose)
- 1T Paprika
- 2 Eggs, beaten
- 2 C Bread crumbs (seasoned)
- 1 Lemon (large ) (zested)
DIRECTIONS
- 1. Pre-heat oven to 425 degrees F (220 degrees C).
- 2. Line a large baking sheet with aluminum foil & drizzle olive oil over foil.
- 3. Place baking sheet in pre-heated oven.
- 4. Flatten chicken breasts so they are all about 1/4-inch thick.
- 5. Season chicken with salt & pepper (to your taste)
- 6. Mix flour & paprika together on a large plate.
- 7. Beat eggs with salt & pepper in a shallow bowl.
- 8. Mix bread crumbs & lemon zest together on a separate large plate.
- 9. Dredge each chicken piece in flour mixture, then egg & then bread crumbs mixture &
set aside in 1 layer on a clean plate - 10.Repeat with remaining chicken.
- 11. Remove baking sheet from oven & arrange chicken in 1 layer on the sheet.
- 12. Drizzle more olive oil over each piece of coated chicken.
- 13. Bake in the pre-heated oven for 5 to 6 minutes.
- 14. Flip chicken & continue baking until no longer pink in the center & the breading is lightly browned (5-6 minutes more).
- 15. Serve
