Cajan Baked Salmon
INGREDIENTS
- 2 Salmon Fillets (boneless)
- 2 t Cayenne Pepper (less for those who like more mild)
- 1 T Paprika (ground)
- ¼ t Black pepper (ground)
- ½ t Salt
- 1 t Garlic (powder)
- ¼ t Oregano (dried)
- ¼ t Basil (dried)
- Black Pepper (fresh) (coarsely ground) black pepper for extra flavor
- ¼ C + 1 T Olive oil
DIRECTIONS
- 1. Combine all spices in a small bowl.
- 2. Place the salmon in a dish & cover with olive oil.
- 3. Sprinkle the spices over the salmon & use a brush to coat.
- 4. Do both sides if skinless.
- 5. Cover & chill for at least 1 hour.
- 6. Grind fresh black pepper over the fillets.
- 7. Heat 1 T olive oil in a cast iron skillet over medium heat & place salmon skin side down.
- 8. Cook both sides for 7 minutes, until the skin flakes off easily with a fork.

Makes 2 fillets
