CAJUN ASIAN CHICKEN
INGREDIENTS
- 4–6 Chicken quarters (cut into eighths)
- 1/2 t Cajun seasoning
- 1 & 1/2 t Paprika (Moroccan paprika, which is oil based, is best)
- 1 t Garlic (powder)
- 3 T Oil Canola oil or Sesame Oil)
- 3 T Soy Sauce
- 1/3 C Karo (dark syrup)
- 1/3 C Pineapple or fresh orange juice
DIRECTIONS
- 1. Pre-heat oven to 350 degrees Fahrenheit (180 degrees Celsius).
- 2. Wash chicken pieces & pat dry.
- 3. Place in a 9- x 13-inch baking pan.
- 4. Sprinkle spices on chicken.
- 5. Combine oil, soy sauce,Karo syrup & juice in a small bowl.
- 6. Pour evenly over chicken pieces.
- 7.Bake covered for 1 1/2 hours, basting occasionally.
- 8. Bake covered for 1 1/2 hours, basting occasionally.
- 9.Uncover & bake for 15–30 minutes, or until crisp.
- 10. If necessary, add a bit of water towards the end.
Tips:
You can easily make your own Cajun seasoning.
There are many different varieties. Here is one option:
Combine 1 t Cumin, 1 t Coriander, 1 t Paprika, 1/4 t Salt,
1/4 t Cracked Pepper & 1/4 t Oregano.
You can add any of the following as well:
Onion Powder,Garlic Powder, Basil, Thyme, Chili Powder,
Crushed Bay Leaves,Cayenne Pepper.
Instead of Dark Karo Syrup,
you can sub 1/3 C Light Brown Sugar & 2 T Dark Brown Sugar.
