Cashew Sesame Chicken
INGREDIENTS
MARINADE:
- 2 Garlic (cloves) (chopped)
- 1 t Ginger (minced)
- 1 Egg
- 2 T Chicken broth
- 1 T Lemon (juice)
- 1 T Lemon (rind)
- 1 t Soy Sauce OR Tamari Sauce
- 1/2 t Salt
- 2 Chicken Breasts (Boneless) (Skinless)
CHICKEN COATING:
- 1 C Cashews (dry roasted) (unsalted) (chopped
- ½ C Sesame Seeds
- ¼ C Cornstarch
- ½ t Salt
APRICOT SAUCE:
- 1 12oz Apricot Jam (jar)
- 1 t Mustard (dry)
- 1 t Lemon rind)
- 1 t Orange (rind)
- Vegetable oil for frying
DIRECTIONS
- 1. Combine all the marinade ingredients & add Chicken.
- 2. Marinade at least for 3 hours OR overnight in the refrigerator.
- 3.Chop cashews finely & mix with sesame seeds.
- 4. Add in cornstarch.
- 5.Heat oil until about 375 degrees.
- 6. Roll chicken in nut mixture & fry in batches until golden brown on both sides.
- 7. For dipping sauce combine all the ingredients.
- 8. Serve over rice with dipping sauce.
