Cauliflower Pizza Crust
INGREDIENTS
- 2 lbs Cauliflower florets (frozen) (thawed)
- 1 Egg (lightly beaten)
- ½ C Goat cheese
- 2 t Oregano (dried)
- 1 t Basil (dried)
- ½ t Sea salt
DIRECTIONS
- 1. Pre-heat the oven to 400ºF & line a baking sheet with parchment paper.
- 2. In a large food processor fitted with a blade, pulse the cauliflower florets several times,
until a rice like consistency is achieved. - 3. Pour the cauliflower into the center of a thin dish towel, then twist it up & use your hands
to firmly wring out moisture. - 4. Quite a lot of liquid should be released, leaving you with a dry lump of cauliflower pulp.
- 5. Place the cauliflower pulp in a large mixing bowl & mix in the egg, goat cheese, oregano,
basil & salt, stirring well to create a uniform mixture. - 6. Transfer the cauliflower mix to the baking sheet & use your hands to press the crust
firmly into a large circular or rectangular crust, about ¼ inch thick. - 7. Be sure to pack the cauliflower mix together firmly & evenly, leaving no thin spots where
the crust may crack. - 8. Bake for 30 minutes, until the top is dry & golden, then carefully flip the crust over &
bake for another 10 minutes.
- 9. Use immediately as a pizza crust.
- 10. To complete the pizza, add your favorite sauce & toppings & then bake for another
10 minutes at 400ºF, until the topping are heated thoroughly.
- 11. Slice & serve hot.

NOTES
Some topping choices:
Colorful peppers, Eggplant, Fresh Spinach &/or Kale, Marinara Sauce
Other types of Cheese, Sauteed Onions, Yellow Squash & Zucchini.
- 1. You can skip the cooking & cooling process when using frozen cauliflower.
- 2. Simply allow the frozen cauliflower to thaw in your fridge overnight, which creates a
‘cooked’ texture without having to do the extra work. - 3. Pulse the thawed cauliflower to create the rice, then drain well using a dish towel.
