Kale With Bell Pepper & Garlic
INGREDIENTS
- 2 t Olive oil
- 1 lb Kale (stems removed) (chopped)
- 2 Red bell peppers (medium) (chopped)
- 1 Jalapeno Pepper (small) ( seeded) (chopped)
- 1 Garlic (clove) (minced)
- ½ C Vegetable broth (organic if possible)
- ¼ t Black pepper (freshly ground)
- ¼ t Salt
- Lemon wedges (several)
DIRECTIONS
- 1. Place a Dutch oven over medium-high heat & add the olive oil.
- 2. Add the bell peppers, jalapeño pepper, black pepper & salt. Sauté for 3 minutes.
- 3. Add kale & the broth.
- 4. Cover & ower the heat to medium-low.
- 5. Cook for another 10 minutes, stirring occasionally.
- 6. Add garlic while stirring & increase raise the heat to medium.
- 7. Leave uncovered as you cook for a further 2 minutes so that the liquid evaporates.
- 8. Serve hot, with the lemon wedges garnish.
