Pan Fried Halibut Steak
INGREDIENTS
- 4 (8 oz) Halibut steaks
- Salt & Pepper to taste
- 1/2 C Flour (all-purpose) (for dusting)
- 1/4 C Butter OR margarine (melted)
- 1/4 C Wine (dry) (white)
- 1 Lemon (juiced)
- 1/2 C Cream (heavy)
- 2 T Parsley (fresh) (finely chopped)
- 4 T Basil (fresh) (finely chopped)
- 2 T Capers (drained)
DIRECTIONS
- 1. Rinse the halibut steaks & pat dry.
- 2. Season with salt & pepper, then dust with flour.
- 3. Melt the butter in a large skillet over medium-high heat.
- 4. Fry the halibut steaks in the butter for 4 to 5 minutes, until nicely browned.
- 5. Remove from the skillet & keep warm.
- 6. Reduce the heat to medium & stir the wine into the pan, scraping up any browned bits
stuck to the bottom. - 7. Mix in the lemon juice, then stir in the cream.
- 8. Simmer for 2 to 3 minutes or until it starts to thicken.
- 9. Season with parsley, basil and capers & stir for another minute.
- 10. Garnish with additional parsley if desired
- 11.Serve halibut with sauce spooned over it.
