Polish Chanukah Apple Cake
INGREDIENTS
- 1 C Vegetable oil (plus more for greasing pan)
- 5 Apples (3 Fuji & 2 Granny Smith) (or any combination of sweet & tart apples),
(peeled) (cored) (cut into 1/2- inch pieces) (about 6 cups) - 1 Lemon plus (juice) (Grated zest)
- 1/3 C Walnut (halves) (roughly chopped)
- 1 1/2 t Cinnamon (ground)
- 2 C Flour (all- purpose)
- 1 t Baking powder
- 1/8 t Salt
- 2 T Almond (chopped)
- 1 1/4 C Sugar plus 2 T sugar
- 4 Eggs (large)
- 1/4 t Almond extract
DIRECTIONS
- 1. Pre-heat the oven to 350°F & grease a Bundt pan or a 9- by-13- inch baking pan.
- 2. Toss the apples in a large bowl with the zest & juice of the lemon, the walnuts & the cinnamon.
- 3. Pulse together the flour, baking powder, salt, almonds & 1 1/4 C of the sugar in the bowl
of a food processor fitted with a steel blade. - 4. With the food processor running, add the eggs, oil & almond extract, processing until
just mixed. - 5. Spoon 1/3 of the batter over the bottom of the pan.
- 6. Scatter the apples on top & cover the apples with the remaining batter.
- 7. Sprinkle the top with the remaining 2 T sugar (you’ll need less if using a Bundt pan).
- 8. Bake for 45 to 60 minutes, or until golden & cooked through.
- 9. The cake will take a shorter time to bake in the shallow rectangular pan than in the
Bundt pan.
