Smoked Salmon & Cream Cheese Quesadia
Latin Recipe
INGREDIENTS
- 1/2 Onion (red) (julienned)
- 1/2 Cucumber(thinly sliced)
- 1 t Capers (coarsely) (chopped)
- 2 T Cilantro (chopped)
- ½ Lemon (juice)
- Kosher salt
- 2 Flour tortillas (12-inch)
- 3 oz Cream cheese (whipped)
- 3 oz Salmon (smoked) (sliced)
- 2 T Butter (unsalted) OR (margarine)
DIRECTIONS
- 1. In a small bowl, mix together the onion, cucumber, capers, cilantro & lemon juice.
- 2. Season to taste with salt.
- 3. Let sit at room temperature for at least 30 minutes to allow the flavors to meld.
- 4. Spread the cream cheese on one tortilla.
- 5. Cover with slices of smoked salmon.
- 6. Top with the second tortilla.
- 7. Melt the butter or margarine in a skillet set over medium heat.
- 8. Fry both sides of the quesadilla until golden brown & crisp.
- 9. Cut into eighths & serve immediately with the cucumber-onion salad
