TORTELLINI SOUP
INGREDIENTS
- 2 T Olive oil
- 1 or 2 Onion (large) (diced)
- 5 Garlic (cloves) (minced)
- Salt & Pepper (to taste)
- 1 t Oregano (dried)
- 1 can Tomatos (15oz) (diced)
- 4 C Vegetable broth
- 1 pkg Tortellini (your favorite variety)
- 1 Spinach (8 oz package) (fresh baby spinach)
DIRECTIONS
- 1. Sauté onion for a few minutes.
- 2. Lower heat, add garlic & sauté until fragrant (about three to four minutes).
- 3. Add salt, pepper & oregano.
- 4. Add diced tomatoes.
- 5. Bring to a simmer & then add vegetable broth.
- 6. Bring to a boil.
- 7. Add frozen tortellini & simmer for 9 minutes, stirring occasionally.
- 8. Add spinach & use a spoon or spatula to submerge the spinach in the hot soup to assist
in wilting it. - 9. Simmer one minute more & serve.
