Turkey Bolognese
INGREDIENTS
- 2 T Olive oil
- 1 Onion
- 2 Celery (stalk)
- 3 Garlic (clove)
- 2 t Thyme (dried)
- 2 t Oregano (dried)
- 1 Cinnamon (stick)
- Kosher Salt & Pepper
- 1 1/4 lb Turkey (lean) (ground)
- 3 C Marinara sauce (low-sodium)
- 12 oz. Linguine (whole-wheat)
- 1 t Nutmeg (ground)
- Basil (chopped) (fresh)
DIRECTIONS
- 1. Heat the oil in a large skillet over medium heat.
- 2. Add the onion, celery & garlic; cook, covered, stirring occasionally, for 6 minutes.
- 3. Add the thyme, oregano, cinnamon & 1/4 t each salt & pepper; cook, stirring, for 1 minute.
- 4. Add the turkey & cook, breaking it up with a spoon until no longer pink, about 5 minutes.
- 5. Add the marinara sauce & 1/2 C water & simmer until the mixture is slightly thickened &
the turkey tender, 20 to 25 minutes. - 6. Meanwhile, cook the pasta according to package directions.
- 7. Drain the pasta & return it to the pot.
- 8. Discard the cinnamon from turkey mixture & stir in the basil & nutmeg with the pasta.
