BREAKFAST POPSICLES
STRAWBERRY & HONEY POPSICLES
INGREDIENTS
- 5 oz Evaporated Milk (comes in a can)
- 1 Lime (juice only)
- 3 T Honey
- 2 T Chia seeds
- 6 Strawberries (large)
DIRECTIONS
- Whisk together the evaporated milk, lime juice, honey & chia seeds in a medium bowl
- Cover & refrigerate until the seeds have plumped, about 2 hours, stirring halfway through
- Hull & finely chop the strawberries & stir them into the chia mix
- Spoon the strawberry-chia pudding evenly among four 3- to 4-ounce ice pop molds
(it will be thick) - Tap the molds on the countertop to pop any air bubbles
- Freeze the pops until solid, at least 8 hours & up to overnight
- Let sit at room temperature for a few minutes before unmolding
- The pops will keep in the freezer for up to 2 weeks
NOTE
Chia seeds make the polka-dot pops fun to eat
& they'll also give you 2 grams of fiber per serving

RASPBERRIES & WATERMELON POPSICLES
INGREDIENTS
- 1 C Raspberries
- 1 C Watermelon (cubed) (seedless)
- 1/3 C Coconut milk (shake well before opening)
- 3 T Honey
- 1 Lime (juice only)
- Kosher salt (pinch)
- Toasted coconut or cocoa nibs (toasted) (optional)
DIRECTIONS
- Combine all the ingredients in a blender
- Puree until smooth
- Divide the mix evenly amoung four 3-4 oz ice pop molds
- Freeze until solid, at least 8 hours & preferably overnight
- Let sit at room temperature for a few minutes before unmolding
- Roll in toasted coconut or cocoa nibs if desired
- The pops will keep in the freezer for up to 2 weeks

BLUEBERRY & LEMON POPSICLES
INGREDIENTS
- 1 cup blueberries
- 1/2 cup low-fat plain yogurt
- 3 tablespoons pure maple syrup
- Zest & juice of 1/2 lemon
- Kosher salt
DIRECTIONS
- Combine all the ingredients in a blender
- Puree until smooth
- Divide the mix evenly amoung four 3-4 oz ice pop molds
- Freeze until solid, at least 8 hours & preferably overnight
- Let sit at room temperature for a few minutes before unmolding
- The pops will keep in the freezer for up to 2 weeks

PEACH & OATS BREAKFAST POPSICLES
INGREDIENTS
- 1 Peach (large) (ripe) (coarsely chopped) (about 1 1/4 C)
- 1/2 C Almond milk (unsweetened) OR Quinoa milk (refrigerated)
- 1/2 Lemon (juice only)
- 2 T Honey
- 2 T Oats (old-fashioned rolled)
- 1 t Peach preserves
- Kosher salt (pinch)
DIRECTIONS
- Combine all the ingredients in a blender
- Puree until smooth
- Divide the mix evenly amoung four 3-4 oz ice pop molds
- Freeze until solid, at least 8 hours & preferably overnight
- Let sit at room temperature for a few minutes before unmolding
- The pops will keep in the freezer for up to 2 weeks

BANANA & KALE BREAKFAST POPSICLES
INGREDIENTS
- 1 Banana (small) (cut into chunks)
- 2 C Kale (packed) (chopped) (kale)
- 1/2 C Greek yogurt (2%) (plain)
- 1/4 C Maple syrup
- 2 Oranges (small) (just using the juice)
- 1/2 Lemon (juice only)
- Ginger (fresh) (1 1/2 inch piece) (peeled)
DIRECTIONS
- Combine all the ingredients in a blender
- Puree until smooth
- Divide the mix evenly amoung four 3-4 oz ice pop molds
- Freeze until solid, at least 8 hours & preferably overnight
- Let sit at room temperature for a few minutes before unmolding
- The pops will keep in the freezer for up to 2 weeks
