ESROG
Esrog is a citrus fruit similar to a lemon, but you can’t squeeze the juices out.
We use the esrog on Succos with the lulav.
Jewish superstition connects esrog jelly to pregnancy & fertility.
Some say it eases labor pains, helps a woman get pregnant &
can be eaten any time during pregnancy for health & luck.

ESROG RECIPE
Unlike other citrus fruits, the esrog has a small amount of pulp
so you'll need a lot of esrogim to make esrog jelly.
- Soak your esrogim for a week changing the water ocassionally
- Chop the esrogim & remove the seeds.
- Discard the ends & the stem (pitom) but keep the peel
- Grind it in a food processor
- Simmer the esrog pieces in water for about 30 minutes & strain.
- Put the fruit back into the pot & heat on high.
- Stir in orange marmalade & add the sugar 1/3 cup at a time mixing until it is mixed thoroughly
- Continuously stir the mixture until it boils & it becomes too tough to stir
- Place the mixture into a jar & seal
- Refrigerate
