THE TRUTH ABOUT
INGREDIENT & NUTRITION LABELS
Some food companies
manipulate the serving size of foods
- The FDA rule is that any food containing 0.5 grams or less of trans fat (found in
hydrogenated oils) per serving is allowed to claim 0% trans fats on the label - Some companies arbitrarily reduce the serving sizes of their foods to very low levels - just enough to bring the trans fats down to 0.5 grams per serving
- The photo on the left shows that the product has 0% trans fat but the ingredients reads
partially hydrogenated soybean and/or cottonseed oil
So 0% Trans Fat doesn't always mean 0%

INGREDIENT LISTS
READ THE INGREDIENTS
Ingredient lists on food products were created
to let you know what's contained in the product you're buying
The truth is that ingredient lists are used by some food manufacturers
to trick you into thinking products are healthier than they really are
- Ingredients are listed in order of their proportion in the product so the majority of the product|
is usually in the first 3 - 4 ingredients - All flour derived from wheat can be called 'wheat flour' even if it is processed, bleached and stripped of its nutrition but "whole grain wheat flour" is the healthy wheat flour
- Brown sugar or brown eggs are not healthier than white sugar or white eggsroducts
- Don't be impressed by gourmet herbs or other ingredients that appear very far down on the
ingredient list since the amount of these ingredients is most likely very small
- Look for words like "sprouted" or "raw" to indicate higher-quality natural food

BE AWARE
There is no requirement for food ingredients lists to include
- Chemical contaminants
- Heavy metals
- Bisphenol-A
- Pesticides
- PCBs
- Perchlorate
- Solvents
To find out if any of these is in your food,
you'll
need to contact the manufacturer of the product
