MAKE SIMPLE & FAST CHALLAH
USING
RAPID RISE YEAST
INGREDIENTS
- 3 Rapid Rise yeast packets (this ingredient is critical - no substitutes)
- 2 ¾ C Warm to hot water (not boiling)
- 1 T Salt
- ½ C Sugar substitute
- 8 C Whole Wheat Pastry Flour
- ½ C Vegetable Oil
Optional Ingredients Year Round
You can use either one or both
- 1/4 C Dried Onions
- 1/4 C Chives OR Dill
Optional Ingredient For Rosh Hoshana
- 1 C Raisins
To give the challah a nice brown color
- 2 Egg whites OR 1/4 C Egg substitute
Optional Toppings
- Sesame Seeds
- Poppy Seeds
INSTRUCTIONS
- Use a big metal bowl
- It’s a good idea to wear kitchen gloves when making Challah
- Add water & mix so all the yeast ‘dots’ get wet
- Add salt & sugar & any of the optional seasonings
- Stir thoroughly
- Add flour & oil
- Start mixing & when it gets difficult knead with your hands
- It also helps if you dip your gloved hands into the measuring cup where you placed the oil
& get your gloves oily - If you’re using whole wheat pastry flour or whole wheat flour, you’ll probably have to add
a little water or a little more oil - When the dough forms a large ball cover the bowl with foil & place in a warmer for 1 hour
- If you don’t have a warmer you can place the covered bowl in your oven at about 150
degrees Farenheit - The dough should more than double & should not be sticky
